Couscous
Stuffed Tomatoes Recipe
Ingredients:
4 tomatoes
1⁄2 cup Cooked Casbah Original or Whole Wheat Couscous
1⁄2 cup diced cucumber
1 teaspoon ground cumin
3 sliced green onions
2 tablespoons fresh basil
2 tablespoons Italian dressing
To make: Slice 4 tomatoes in half. Leaving shell
intact, scoop out pulp and coarsely chop. Mix pulp with 1⁄2
cup Casbah couscous, 1⁄2 cup diced cucumber, 3 sliced
green onions, 2 tablespoon chopped fresh basil. Add Italian
dressing to moisten. Spoon into tomato halves.
