Pumpkin Curry Soup

Ingredients
1 Tablespoon EDEN® Extra Virgin Olive Oil
1 clove garlic, finely minced or pressed
1/2 cup, onion finely minced or grated
3 cups unseasoned pumpkin puree
2 cups EDENSOY Organic Unsweetened Soymilk
2 cups water
3/4 teaspoon EDEN Sea Salt
13/4 teaspoons curry powder
1/8 teaspoon nutmeg
1 pinch cinnamon
1 pinch finely ground black pepper
2 Tablespoons pure maple syrup
Garnish with EDEN Organic Spicy Pumpkin Seeds
and 1 Tablespoon fresh parsley, chopped

Heat oil in a saucepan, sauté the garlic and onionfor 2 minutes. Add all remaining ingredients except the garnishes. Stir. Cook over medium heat without boiling, stirring frequently until hot, about 5 minutes. Serve and garnish with parsley and EDEN Organic Spicy Pumpkin Seeds.
