Quinoa Stuffed acorn Squash with Cherries

Ingredients
1/2 cup EDEN® Organic Quinoa, cooked
2 medium acorn squash, halved and seeded
1/2 cup walnuts, chopped
1/2 cup EDEN Dried Montmorency Cherries
2 Tablespoons EDEN Organic Barley Malt
1/4 teaspoon ground cinnamon
EDEN Organic Safflower Oil
Preheat oven to 350º.

Lightly oil the squash. Mix warm quinoa, barley malt, walnuts, cherries, and cinnamon.
Stuff each squash half with the mixture. Bake in a covered dish 45 minutes or until squash is tender.
